Love, love, love green onion pancakes. The best of course are the ones sold from street vendors in Taiwan. Just wanted to give this a try and see how home-made green pancakes taste.
Green Onion Pancakes
Ingredients
2 1/2 cups all-purpose flour
3/4 cups boiling water
1/4 cup cold water
1 1/2 teaspoons salt
3 tablespoons oil or other fat substitute
1 bunch of green onions finely sliced
Directions
Mix flour, salt and boilng water together. When cooled, add cold water and knead dough until elastic. Let the dough rest for 1 hour.
Cut dough into small pieces. Roll one piece out on a floured surface into a square. Sprinkle green onions on top and roll. Curl the dough like a snail and flatten with the rolling pin. Fry in pan until golden brown.
As you can see, it sounds simple enough. One guy even has a video on it. Too much trouble to make it again though - better off getting it at the nearest Taiwanese restaurant or in the frozen section of your neighborhood 99 Ranch.
