This week's Project Pastry Queen assignment - Southern Comfort Apple Pie. As I didn't have a pie plate, I opted for mini tarts instead. The filling is pretty fantastic - tart apples cooked in butter, sugar, cream and a "splash" of Southern Comfort liquor. The result is a whole lot of caramel-y goodness. The dough itself was super easy to make - just throw all ingredients into the mixer! The tarts are topped with a pecan streusal that bakes up like a crunchy shell. I used 3 granny smiths and ended up with 3 dozen mini tarts.
I think this recipe is better off as a large pie rather than mini ones - there is too high of a dough:filling ratio. A large pie would ensure everyone getting enough of the yummy filling. Definitely put this on your radar for your holiday baking - I think the general consensus is that this is the best apple pie ever!
