Fish Tacos-6

For Superbowl Sunday this year, we decided to throw a big party and cater Ricky's Fish Tacos at Ray's house. It was the perfect Southern California day, sunny and bright, allowing us to serve up what a lot of people have called the "best Baja-style fish tacos in Los Angeles."

It proved to be quite a challenge to track down Ricky. As you can tell, there is no website or phone number, just Twitter. Ricky started his fish taco business with a cart outside a laundromat and has since taken a semi-permanent residence on Virgil Ave. Apparently, Twitter is the only way you will find out his hours and the only way to reach him if you want to hire him for an event. We were super excited to have been able to land Ricky for Superbowl Sunday. Ricky has already indicated he is all booked for the summer months.

There were a couple of options for ordering, either by the taco with a minimum amount required or an all-you-can-eat fish taco option requiring at least 40 people. We opted for the all-you-can eat with a side order of shrimp tacos and agua fresca. We had Ricky and his nephew set up shop in the backyard and he brought with him this large frying contraption that allows for both frying the fish and grilling the tortillas. Ricky uses fresh Vietnamese catfish, basa, for his tacos. One thing everyone loved about the tacos was the batter-to-fish ratio. Alot of fish taco places tend to skimp on the fish and and make up the bulk in fried batter. Not Ricky's fish tacos though - the fish is held vertical, allowing excess batter to drip off the fish prior to frying, thus ensuring a higher fish to batter ratio. The only complaint we heard was the overly salty batter.

A makeshift table held all the fish taco fixings, including fresh cabbage, pico de gallo, 3 salsas in varying degrees of heat and two types of white sauce, the regular crema and a lobster-infused crema.

We also heard great things about their agua fresca and order two different ones: spinach-cucumber and mango-pineapple. We found these to be too sweet and added fresh lime juice to both to balance out the flavors.

All in all, a very fun and delicious Superbowl Sunday. Everyone loved the fish tacos (sans the salty batter) and we will definitely be catering with Ricky's Fish Tacos again!
