Roasted Grape and Ricotta Crostini

Grilled bread + cheese + fruit? Yes, please! True to it's name, this recipe is real simple. So simple in fact, that there is no need for measurements. Just buy a loaf a bread, a bag of grapes, a pack of thyme and a container of ricotta and you've got yourself a fancy-looking, super easy appetizer or light lunch served alongside a salad. The grapes, when roasted, releases all its juices which you can then drizzle on top of the crostini. It helps keep the bread and ricotta from tasting too dry. Can't wait to try this with some roasted summer peaches!

Roasted Grape and Ricotta Crostini

Ingredients
Red grapes
Thyme
Fresh ricotta
Grilled bread
Salt and pepper to taste

Directions
Toss whole red grapes with olive oil, fresh thyme sprigs, salt, and pepper and roast at 450° F until their skins burst, 7 to 9 minutes. Slather slices of grilled country bread with ricotta, top with the grapes, and drizzle with olive oil; season with salt and pepper.

  1. Crostini on the brain! I've been thinking about bread+cheese+fruit too. There's just so much summer bounty to choose from... this sounds like a good place to start.
